Ice Cream Perfection

I have been making ice cream for about five years now. It wasn't bad, but there was always something off about the texture. It was never perfect. I had a few different books and tried a bunch of different recipes, but was never thrilled with the results. Then I ordered this book and all of a sudden, my ice cream making abilities have skyrocketed. Every recipe I've tried so far has been perfect. I give this book my highest recommendation. I order A LOT from Amazon and this is the first book I've taken the time to review. It's that good!!!

This is a fantastic classic ice cream book! Easy too!

This is a fantastic classic ice cream book! Easy too! Everything we’ve tried has been delicious, with the focus on flavor, and they’re not overly sweet. Recommend!

Pictured below:
1-2) Delicious! I made the Fig Ice Cream – p 80 with ripe figs off of the tree in our backyard, and it was outstanding! Easy, too. There were no eggs involved, so we were eating it about 1 1/2 hours after we started! His is a stunning magenta color because he's using black mission figs. Ours is a more understated color because our figs are green with a pink center. I topped it with a homemade dulce de leche and a balsamic glaze from Trader Joe's. This is the yummiest thing we've done with our figs.
3) Aztec “Hot” Chocolate Ice Cream – p 29. Two kinds of chocolate, cinnamon, and chile powder give this great depth of flavor. There are no eggs in it, so it’s another quick one. If I pull out the ice cream right after the cycle is done running, but before it goes onto its final chill, it’s soft serve consistency.
4) Rum Raisin Ice Cream – p 53. This has eggs in it, which takes a bit longer, but makes for a much richer base. This is *fantastic* ice cream!
5) Passion Fruit Ice Cream – p 94. Love this one. Really rich, fruity tropical vacation in a cup. I think this would make a fun adult milk shake with a little rum or tequila.
6) Dried Apricot-Pistachio Ice Cream – p 75 in Crepes – p 233. This is my new favorite ice cream. The apricots simmer and soak in a little Pinot Grigio, and the whole thing tastes like a kiss of sunshine. Absolutely divine.
7) Toasted Almond and Candied Cherry Ice Cream – p 60 with Candied Cherries – p 215. Awesome stuff! My daughter just asked if I could make this to layer into her birthday cake.

I love sushi, and I love economics, but even if I cared for neither, "The Sushi Economy: Globalization and the Making of a Modern Delicacy" would still be an entertaining and eye-opening read. A tale of culture, globalization, cuisine, and historical drama, "The Sushi Economy" traces back the modern explosion of sushi back to the 1970's. Although sushi had been sold by Tokyo street vendors in the 19th century, its rebirth as a culinary and cultural staple began when Japanese air shippers, after dropping off shipments of manufactured goods in North America, brought back North Atlantic bluefin tuna--at the time considered worthless and fit only for cat food--rather than fly home empty planes. Concurrent advances in refrigeration allowed seafood to be shipped large distances, and this increase in supply, along with a booming post-war economy, fueled Japanese demand for premium sushi and saw the rapid expansion of sushi bars throughout the country. Japanese overseas expansion brought sushi along with it and spawned a growing network of suppliers, including fishermen and the newer fisheries, and specialty distributors, as well as black market dealers and smugglers.

The seafood infrastructure, however, was only one part of the sushi explosion, as innovative sushi chefs became entrepreneurs, initially marketing sushi as a chic, upscale delicacy but then broadening its appeal by adapting to local flavors and cuisine.

Despite its specific origins from a small, island nation, sushi has become a global cuisine and the economy that supports it a global one as well. A Not-So-Ancient Delicacy in a Modern World Economy

In _The Breakfast Club_ from 1985, Molly Ringwald's character brings her lunch to detention, but it isn't the typical brown bag the other kids have brought. It is a tray of sushi, and the rest of them are astonished, maybe because they have never seen such a food before. It is a scene that is now quaintly dated, even after only a couple of decades, because although a Big Mac might still be more the prevalent norm, and although sushi is still something of an exotic food, it is popular rather than mysterious. The way this came to be involves marketing, technology, and a shrinking planet, and is the story of _The Sushi Economy: Globalization and the Making of a Modern Delicacy_ (Gotham Books) by Sasha Issenberg. Sushi is based on raw fish, mostly tuna, but it isn't really fresh and it decidedly is not simple. This is not a book that will make you wince or feel guilty over your next tuna roll, and it may even beat the drums for globalization. We do have, even in small towns, the capacity now to enjoy this tasty delicacy, and as Issenberg writes, "In few places are the complex dynamics of globalization revealed as visibly as in the tuna's journey from the sea to the sushi bar."

The sushi story is the story of tuna, and Issenberg follows the fish backward from market to its origin in the sea. The main market is the Tsukiji which takes up 57 acres in Tokyo, where a few hundred buyers gather to take a look at tuna brought in from all over the world. This is a huge market of $6 billion a year, and one fish alone might routinely go for $30,000. The great change in the market came starting in 1972 when there was a first Tokyo auction of Canadian bluefin tuna, brought by plane from a region where the fish were considered worthless. The tuna, rice, and seaweed delicacy with which we are familiar, Issenberg says, "served by a sushi chef to a customer seated before him - is in fact no older than the California roll," which was itself an American invention of the 1960s. "Sushi had started as a form of preservation," Issenberg writes, "but it was becoming precisely the opposite: a way of using the infrastructure of modernity to chaperone a delicate dish around the world." This has resulted in overfishing, and attempts to farm tuna, "moving the ocean's biggest, fastest, toughest fish into a cage and keeping it there for months or years." Of course aficionados sniff at the quality of farmed tuna meat, but that doesn't matter to those who, say, like a cheap tray of tasty sushi from the supermarket.

There are wonderful profiles in this book, like the Caucasian tuna chef who successfully brought sushi to Austin, Texas, or the self-appointed sheriff of Libyan tuna poaching who uses Google maps to monitor illegal fishing, or the disciples of the Reverend Sun Myung Moon who entered the market in Gloucester, Massachusetts, or the champion tuna tosser at the Port Lincoln Tunarama Festival, or the star of _Iron Chef_ who is opening a sushi restaurant in Mumbai, or many more. Each profile shows how global an enterprise sushi is. Issenberg reflects: "To eat sushi is to display an access to advanced trade networks, of full engagement in world commerce." Sushi is now so prevalent as to be taken for granted; it is good to be reminded of how complex and how modern a story it really is.

The economics of tuna

I added this one to my to-read list at the same time as The Zen of Fish (by Trevor Corson), and I was a little worried that they'd be redundant, but they weren't really. They had some things in common - the history of sushi and the Tsukiji fish market - but I didn't think they covered too many of the same topics. This book focused a lot more on tuna, and it did discuss the economics of sushi much more. Each chapter discussed a different issue related to sushi: The Tsukiji market and some logistics of sushi, the history of sushi, fisherman in New England, tuna ranching in Australia, a sushi bar owner in Texas, and Nobu Matsuhisa. I would have marked the book much lower if he hadn't discussed the issue of sustainable fishing, but it is covered in depth near the end. Between the two books, I liked this one better. However, it doesn't have a story in the same way that the other did, which may make it a little harder to read for some; your mileage may vary.

About the Author

AL BROOKS is a technical analysis contributor for Futures magazine and an independent day trader. His approach to reading price charts was developed over two decades in which he changed careers from ophthalmology to trading. Brooks graduated from The University of Chicago Pritzker School of Medicine in 1978 and received a BS in mathematics with honors from Trinity College in 1974. Best Trading Books Ever Written.

Not an easy read and not for someone with a casual or passing interest in trading. I had to read these books 3 times to really grasp the concepts that Al teaches. Now that I have followed his advice and gone through a zillion charts of the currency pairs I trade and pointing out setups, I have developed the ability to spot trades that have over a 50% chance of making 1.5-2x my risk. The hardest part of trading in my mind is developing the skill to ONLY take those trades and never ever place another order outside of my trading plan! I watched his video course and that helped me grasp a lot of the concepts in a different way, then I went back and read the books for a 4th time, and then I started developing my own trading systems based on Al's concepts.

A lot of muppets out there will criticise Al because he speaks tin vague terms (ie usually) and doesn't give you a complete trading system. I also hear criticism that Al must not be a profitable trader because he spends his time writing books. My gut feeling (which could very well be totally wrong) is that Al is an extremely skilled and insightful trader who has such a deep understanding of markets compared to most professional traders (I have worked on several trading desks and can definitively say I have never met any bank or hedge fund trader who has even a shred of the insight that Al provides in his books...not saying they aren't out there, but they are RARE) and I also get the impression he is a bit arrogant and wants to be worshipped as a Guru...AS HE WELL SHOULD BE!

His 3 volume set has changed my life. It is true that Al doesn't give you a trading plan on a silver platter. He does however give the serious student of his works the knowledge to understand how markets function and how to spot high probability setups, whether scalps or swings.
It is up to the reader to build his own trading system around Al's methods if the reader is so inclined. I personally don't scalp and only focus on trades where my reward is 2x risk. I have done extensive backtesting on my carefully selected setups from Al's teachings on my favourite currency pairs..all my backtesting is done by hand, and I only look for great looking textbook setups. I am not a programmer and have no idea how to do this other than manually, but I actually think doing it manually is best since it helps me tune in even more with the market.

Once you have a clear grasp of what Al is teaching, you have at your disposal a lot of different price action setups and a zillion and one financial instruments out there to trade them on. Why not backtest your various system ideas on different instruments and see what works? The sky is truly the limit.

Finally, I would like to say to Al: Thank you for taking the time to write the 3 greatest masterpieces ever published in the history of mankind.

Incredible course. Months to capture it's truths. Brooks' ...

Incredible course. Months to capture it's truths. Brooks' mind as an eye surgeon prepared him well to transfer his analytic mind to know/and write this tome of truths about day trading. It will be many years before something matches this if ever. This said, I might urge YOU dear reader to invest in the course on line 1st, even though it's more expensive. $249/ It's so much easier to absorb, and navigate through the many "modules" of learning with the reinforcement visually seen and explained. Brooks explains calmly, and soothingly, with simple language about complex ideas that build on themselves. Done in well thought out sequences with ample charts, the downloaded course reinforces what the books present, and with the 1st of the 2 purchases, perhaps the download method is easier to tackle. I have both resources, and now with 6 months into the purchase know I have many more months of information to glean, and probably years of benefits from it all as well as refer to. Thank you Mr. Brooks for your contribution.

Hard to read, for a good reason

Do you want to know why your indicators don't work for you but they do for someone else? Have you heard the expression "Price action is pure?" That's what this book is all about.

Open a chart, e.g. a daily candlebar chart of AAPL. Then apply Bollinger Bands, then moving averages (SMA/EMA), then Stochastics, then MACD. Oh my... What are you looking at now? Exactly!!! You're looking at the indicators while you need to be looking at the chart itself, the patterns, the candle types, e.g. dojis, hammers, etc. The chart generally tells you everything you need to know, e.g. who's in control: bulls or bears, where the institutional buying / selling pressure is, important S&R levels, and so on.

This is not the easiest book to read. Every chapter usually has a chart followed by lots of text explain it, so you'll be going back and forth between the chart and the text. The author recommends printing out the charts separately and has those charts on his website.

That being said, it's still the best book I've seen so far on price action and it has helped me a lot.
Five stars easily.

Divided into five sections "Departure," "Motives," "Landscape," "Art," and "Return" the essays start with one of the author's travel experiences, meander through artists or writers related to it, and then intertwine the two. De Botton's style is very thoughtful and dense; he considers events of the moment and relates them to his internal dialog, showing how experiences from the past affect the present. In "On Curiosity," for example, which describes a weekend in Madrid, De Botton compares his reliance on a very detailed guidebook to the numerous systematic measurements Alexander von Humboldt made during his 1799 travels in South America. De Botton compares Humboldt's insatiable desire for detail with his own ennui and wish that he were home. There are also details about a fight over dessert, the van Gogh trail in Provence, and Wordsworth's vision of nature. A must for blas� travellers

In the past, when I still regularly attended graduation parties, such parties were always teeming with graduates-to-be harbouring fanciful travel plans. Everybody seemed intent on getting away a.s.a.p., as long as possible, and to a very far away and preferably out of the way place. They wanted to become travellers, a breed not to be confused with commonplace tourists. I've never been able to detect any intrinsic motivations driving this graduate travelling habit, e.g. a deep-seated and longstanding interest in a particular country or culture. It was simply a matter of opportunity, this jumping at the a chance to be thoroughly irresponsible for a while, before entering on the responsibilities of a steady job. And of course, everybody was going and it would be very un-cool to stay at home. After these people returned from their well-organised adventures, it invariably struck me how little they had changed, and how little they had to tell about the places they had been; apart maybe from random scraps on local customs that I could as easily and more completely have found in any travel guide book. Nevertheless most of these people, even years later, would be prone to lapse into dreamy states of blissful reminiscence at the slightest cue, expressing a deep longing to go back there, preferably to stay. It got me wondering why it is that the same things we find boring or commonplace at home are suddenly deeply interesting simply because they occur 5,000 miles away.
I remember one such party where I met an acquaintance who just got her degree in philosophy. I asked her if she was planning on her more or less mandatory world trip as well. But she just gave me a weary smile, tapped the side of her head and said: `Travelling is something you do in here'.
In a nutshell that's the question and the essence of the answer in Alain de Botton's thoughtful book on travel. Why do we bother? What do we expect, and why are we so often disappointed? And then again, why do our memories of the trip rarely reflect the disappointments? And what is the clue to not being disappointed? How do you go about really experiencing the place where you are and making it part of yourself? On all such questions De Botton has interesting and often entertaining observations to make. He shows us that the exotic is not defined by long-haul flights and palm trees, but can be found literally on your doorstep if you just know how to look. He explains why a travelling Englishman can be depressed on far away and exotic Barbados and euphoric in nearby, but in many ways equally exotic Amsterdam, or even around the corner in Hammersmith where he lives. As a Dutchman I was fascinated by his detailed analysis of a sign in the arrivals hall of Amsterdam Airport, explaining its exotic nature from a British viewpoint, and the reasons you would never ever find a sign like that in the UK, just across the Channel. De Botton is a master at finding such surprising angles to elucidate his subjects. Moreover he has considerable erudition to add, resulting in an engrossing mixture of philosophical insight, personal experience, and references to artists, writers, explorers and scientists of the past. Mostly these historical figures, Flaubert in Egypt, say, or Humboldt in South America or Van Gogh in the Provence, are exemplary `artists of travel', people who knew how to make the most of their expeditions. By taking their mindset, involving energy, patience and an eye for detail, as a template, De Botton generates some useful suggestions for the modern day traveller who no longer wants to bore himself by `scoring' obligatory highlights in the guidebook star-rating order, or who refuses to be a slave to his camera any longer. He may even give you some clues as to how to deal with that greatest travelling problem of them all, the fact that wherever you go, you always have to take yourself along.
In all, an elegant, intelligent, thought-provoking, amusing and useful little book, that nobody who takes travelling seriously should miss. Don't take it with you though - it won't last you much longer than an afternoon on the beach...

A thought provoking read on the process of travel

Wow, what a thought provoking book! For someone who has a ferocious appetite to travel (and does both personally and for work) it gave me a fresh perspective on how one should go about traveling and experiencing the world. This is a story of de Botton's experiences intertwined with stories from some of the greats of our history (e.g. Pascal, Neitzsche, Baudelaire etc.). It literally takes you on a journey from the anticipation of travel all the way through to the return to your home and life.

I normally would read this book quite quickly however throughout there were sections that made me stop and reflect on my own travel experiences. At each page turn my values and approaches to travel was challenged and critiqued and I loved it!

Three key takeaways from the book:
1. I'm torn between Pascal's perspective of truly enjoying and taking in a historical artifact (or art) versus being an artist where you take in what you see and then create something unique and creative that enhances the experience for you and for others. I believe that there is room for both depending on the situation. Such as life today where people photograph and video things versus stopping to just enjoy the experience.
2. We want to be happy in our lives and travel seems to provide us with a mechanism to do that. The problem is that we only experience this happiness while traveling because we are outside of the constraints of work and our struggle to survive
3. De Botton advocates travelling alone to be an advantage. He believes that responses to the world are molded by the company that we keep, therefore we align our curiosity to fit in with the expectations of others.

Thoughtful, provoking, entertaining.

De Botton's book is another that I came across at the library in which I work. I was so enamored of it that I had to own it (3 cheers for Amazon!) The book is a series of essays ("On Anticipation", "On the Exotic", "On Possessing Beauty", etc.) interspersed with black&white reproductions of paintings and photographs.
Each essay/chapter contains a place/places and a "guide/guides." For example, in #2 ("On Travelling Places"), the "guides" are French poet Charles Baudelaire and American painter Edward Hopper. Using quotes from the former and paintings from the latter, de Botton evokes the romance of airports and train stations and other places of arrival & departure--how they are the stuff of hopes, dreams, inspirations.
He also writes of the joy of the journey itself, where one is transported not only away from the physical familiarity of home, but into a state of suspension, where--for a time--the worries & complaints of everyday living don't exist. I have experienced this sensation as well as the joys of anonymity--an experience which can transform even a cheap motel room into a sanctuary from daily demands.
Hightly recommended.

Twenty-five years after the event, assassination books continue to appear. Marrs, a Dallas-area journalist who teaches a college course on the event, has, however, produced a special one. Its nearly 600 pages are jammed with detail on every aspect of the shooting, the investigations, the suspicions that fell on the Mafia, the FBI, the CIA, anti-Castro Cubans--all the usual suspects. For its comprehensiveness alone, this would be the one book for anyone seeking a really thorough examination of the assassination (but it sorely needs an index). Marrs is sensible and straightforward, giving every side of disputed questions, though it is clear that for him, as for most thoughtful people, the Warren Commission's picture of Oswald as a lone assassin doesn't work. The author talked to witnesses never officially interviewed, even offers never-before-seen pictures (though these contain nothing very startling). His conclusion: Kennedy made so many enemies in business, the military, the right wing, the mob, that his death became inevitable. He sees no Washington-based assassination plot, simply a willingness at the highest level (specifically Lyndon Johnson and J. Edgar Hoover) to relax protective vigilance enough to allow the deed to be done.

We have witnessed the publication of myriad works which purport to explain the events surrounding the assassination of President Kennedy, such as Anthony Summers's Conspiracy ( LJ 6/15/80). Although most of these accounts suggest that Kennedy's death was the product of a conspiracy, they offer different interpretations as to who conceived and perpetrated this heinous crime. Dallas journalist Marrs brings together under one cover diverse theories and facts advanced in many of these works. He points to the inconsistencies and unexplained elements embodied in the official versions as to what transpired in Dallas before, during, and after the President's death. He does not, however, provide a novel theory that would answer some of the vexing questions raised in a reconsideration of the assassination. Appropriate for those with a special interest in the topic.

Jim Marrs' Crossfire: The Plot That Killed Kennedy, published in 1989, still offers, in my opinion, the best introduction to the JFK assassination newbie. It was not the first book on the subject I read, but I wish it would have been. The book I picked up first dove deep into some very specific aspects of the case, and a pretty comprehensive overview of the assassination and the theories offered as to the truth about it would have made my initial plunge much easier. Not only does Marrs seek to bring together and distill the bulk of information out there, he does so in an orderly and systematic fashion. Part One looks at the assassination itself: the motorcade route and security, the movements of JFK and John Connolly at the time they were hit, the accounts of all manner of witnesses in and around Dealey Plaza, a detailed look at activity in and around the Texas School Book Depository as well as the Grassy Knoll, etc. In Part Two, he pontificates on the motives and means of all of the most likely culprits behind the murder: Lee Harvey Oswald, the Soviet Union, pro-Castro as well as anti-Castro Cuban exiles, the Mafia, the CIA, the FBI, big business (especially oil), right-wing extremists, and the military. In Part Three, he examines all manner of evidence with a critical eye. The chaotic aftermath of the shooting offers up much food for thought in terms of unusual sightings and events, not the least of which is the murder of Officer Tippet and the movements of Lee Harvey Oswald from the time of the assassination to his capture in a local movie theatre. Jack Ruby's history and links to organized crime are threshed out, revealing many intriguing possibilities about the possible extent of Ruby's role in events. Marrs then attacks the basic foundations of the Warren Commission analysis, going into a good bit of detail about the probably forgery of incriminating photographs of Oswald, revealing unforgivably sloppy breakdowns in the chain of evidence, easily explaining how the bullet that miraculously appeared essentially intact on a stretcher in Dallas could not possibly have done all the damage the Warren Commission's "magic bullet" officially did. From there, he explores Jim Garrison's case against Clay Shaw for conspiring to kill the president and goes on to summarize the workings and findings of the House Select Committee on Assassinations in 1979. Only at the conclusion of the book does he express in a straightforward manner his own theory as to what happened.
Crossfire just offers one important piece of information after another, easily preparing the way for the reader to pursue a more detailed study of the assassination. Marrs is not totally objective at all times, yet he does touch upon just about every important facet of what is a most complicated case. The number of coincidences and links between different suspect groups is nothing short of incredible, and you really need to have an understanding of how, for example, the CIA and Mafia were linked together in efforts to kill Castro, how Oswald's possible role in intelligence plays into different scenarios, etc., in order to come to terms with all of the theories out there. The medical evidence in this case is amazingly frustrating and controversial, and one can get lost without an understanding of the differences in the testimony of employees of Parkland Hospital in Dallas and the findings of the undeniably unprofessional and sloppy (not to mention illegal) autopsy. Marrs isn't afraid to summarize the most controversial of opinions, which can help the assassination novice look out for potential landmines in his/her further reading.
In his concluding chapter, Marrs finally offers what he believes is a possible scenario to explain all of the facts he has attempted to address in the main body of the book. He in no way presents these ideas as facts or probabilities. He goes farther than some Warren Commission critics go, pointing fingers of potential culpability at a significant number of different groups somehow coming together to eliminate a man each group had reasons for opposing; he clearly sees the assassination in terms of a coup d'etat with some level of complicity (be it passive or active) at the highest levels of government. Many, including myself, find this to be a little far-fetched, but Marrs' personal theory does not get in the way of all the facts he presents throughout the book. Anyone who accepts the official story of the tragedy without question will naturally find fault with Marrs for his differing conclusions, but those willing to examine the case with an open mind will find much food for thought in this remarkable book. There are no footnotes to be found here, but Marrs lists a significant number of sources alongside a selected reading list. Basically, this book prepares you for a more detailed look at all of the evidence, making this an invaluable introductory guidebook to the tangled world of JFK assassination theorizing.

A well-needed 2nd Edition!

I read the first edition when it first came out. It is well-written, so much so that it could also be used as a reference book. As you may already know, Oliver Stone used it as a reference, along with Jim Garrison's ON THE TRAIL OF THE ASSASSINS for his film, JFK. The 2nd edition also fills in where the 1st left off, including the Assassination Review Board results and aftermath. His conclusions (they are my own also) STILL hold up even after MANY in the mainstream media still tout Lee Oswald as the "lone-nut assassin". If you are not sure, this is a very objective book to draw your own conclusions.

I Didn't Know How This Book Could Get Much Better

But it did, in this new edition! I am a fan of Jim Marrs. His keen ability to write a book that is based in solid research and that remains an intriguing story is unsurpassed. Because of his early and continued work on the learning and teaching about the JFK assassination, readers like me have been able to follow the best research and theories over the past fifty years, to stay in touch with those who keep digging for truth on what is new about this U.S. coup d'�tat. Marrs slowly and carefully explains what has been discovered since his first book and I appreciate his intriguing and clinical approach. Where would we be without this journalist and author? Not nearly as far along on learning what happened to our president and to this country because of greed and power.
